Desiccated coconut or coconut flour: what is the difference?

Both come from coconut meat, but they serve different purposes in the kitchen. Consider the texture and the recipe before substituting shredded coconut with flour.

  • For visible texture: Choose shredded coconut as an ingredient or garnish.
  • For coconut flour recipes: Note the flour's processing and liquid requirements.
  • Do not simply substitute: Finely ground shredded coconut is not automatically partially defatted coconut flour.

Shredded coconut and flour are processed differently

With shredded coconut, small pieces of the fruit flesh are visible. Rapunzel describes its shredded coconut as crushed and dried coconut flesh. The difference therefore concerns more than just the visible grain. Check how a flour was produced. The name and processing stated on the respective packaging are more informative than the impression that both ingredients look light-colored and taste like coconut.

When shredded coconut is practical

If you want to see or chew small pieces of coconut, shreds are the obvious form. Sprinkle them, for example, on plain yogurt with pieces of mango or on a dessert in a glass. For a garnish, you can leave part of the surface free so that both the fruit and the coconut remain recognizable.

When baking, they are a potential ingredient for a recipe calling for shredded coconut, such as coconut cookies. Weigh the required amount; a loose handful is imprecise as a substitute for a gram measurement. Rapunzel also lists muesli, sweet dishes, and Asian meals as applications for its shredded coconut.

For a breakfast bowl with shredded coconut and fruit, you will find suitable ideas for cutting and arranging under using dried mango. Shredded coconut remains a visible addition to this; coconut flour fulfills a different role in a recipe.

What to consider with coconut flour

Rapunzel points out the high moisture-binding capacity of its coconut flour and mentions it for, among other things, thickening soups and sauces. Therefore, you should read a coconut flour recipe along with its liquid measurements before you begin with the dough. For pancakes or cakes, a recipe specifically tailored to it is a sensible starting point.

Have the flour and liquid measured out separately. This allows you to follow the instructions step-by-step without having to add more of either by intuition while mixing.

Why finer grinding does not provide an equal substitute

You can turn shreds into smaller particles; however, this does not result in partial defatting. Therefore, do not simply replace the same amount of ground shreds in a recipe for partially defatted coconut flour. Conversely, fine flour does not provide the same visible shredded texture on a dessert.

If the required ingredient is missing, it is better to choose a recipe for the form you have on hand. This spares you a spontaneous modification of flour, liquid, and other ingredients simultaneously.

Recognizing the right form when shopping

Read the product name, ingredient list, and usage instructions together. If you are looking for a garnish, pay attention to shreds; if your recipe calls for a specific coconut flour, check its processing. You can find further ingredients to combine at Baking and Cooking Ingredients.
